The highest level of burning meat is to burn a whole pig. In Baoshan area, a whole pig is put in a special earthen kiln, or directly set up with thatch and firewood to light a fire. The pig is free-range, eating only grass and corn until it is ripe in June or July, and then the surface washing, where the pig has been blackened, is clean.
